Yeah! The heat is on! But don’t let this heat take a toll on your health. If you don’t know how, try these simple recipes suggested by Culinary Expert Jayashree kalita, to keep yourself cool and calm this summer.

 

  1. Falooda

Falooda comes in between dessert and cold beverage. This is a little heavy if you consider it as a beverage. Hence, you have to scoop out and eat 80% of the falooda with spoon.

 

 

 

Falooda

Ingredients

2 teaspoons- Basil seeds (Sabja seeds or Falooda seeds)

1 ½cups Milk

2 tablespoons Sugar

Handful of Falooda Sev

2 Teaspoon Rose syrup

2 scoops of Ice cream

Few Pistachios chopped for garnishing

Few Rose petals for garnishing (optional)

Preparation:

Take some water in a pan, let it come to a rolling boil. Add falooda sev, let it cook for 4-5 minutes. Drain it and rinse it with cold water immediately to stop further cooking. using kitchen scissors, cut them into approx 1 inch pieces, so it will easier to eat later. Now everything is ready, soaked basil seeds, chilled milk and sev. Let’s assemble the falooda.

Falooda recipe:

Take two glasses. Add spoonful of basil seeds to it. Then on top add cooked falooda sev. Then add 1 tablespoon of rose syrup in each glass. Pour the milk in it. Some basil seeds will float on top. Then add a scoop of ice cream. Garnish it with chopped pistachios and rose petals. Serve immediately.

 

  1. Rooh afza Icecream Milkshake

This is one of the easiest summer drink recipe. Very cooling and refreshing at the same time. This syrup adds sweet and aromatic flavor to the dish.

Rooh Afza

Ingredients

2 cups Milk Chilled/Cold

4 tablespoons Rooh afza syrup

2 tablespoons Sugar

1 ½ teaspoons Basil seeds (Sabja seeds or Falooda seeds)soaked for 30 minutes, optional

Instructions

Add rooh afza syrup to the chilled milk, add sugar. If sugar has big granules then grind into powder, so it dissolves quickly. Mix well and keep it refrigerated till serving.

 

  1. Thandai Lassi

It is basically an array of nuts and various spices, ground together, mixed with milk and served.It’s milk flavored using selected dry fruits and spices like fennel seeds and cardamoms.

Ingredients

Curd 2 cups

Sugar 4 tb spoon

Rose water 1 tb spoon (optional)

Water 2 cups

Ice cubes 2

Rose petals 5-6 (optional)

Thandai masala powder( made from Almonds 20 cashews 10,cardamom 2,fennel seeds 1 tea spoon,poppy seeds 1 tea spoon ,saffron strands 2-3) 1 tb spoon

Instruction

For the thandai masala grind almonds, cashews, fennel seeds, poppy seeds, cardamom in grinder to get fine powder. Add curd, thandai masala powder, sugar in a blender and whisk it for few seconds. Add rose water, water in blender and blend again for few seconds to make the lassi. Check the consistency. If you like it more watery add more water and give it a whisk. Add ice cubes and garnish with rose petals and saffron strands and serve chilled.
